Homemade "Sun-Dried" Tomatoes


I love to preserve the fresh taste of summer by making “sun-dried” tomatoes.  These are quite simple to make and not actually dried in the sun.  Here’s how.



Preheat the oven to 400.



Start with several San Marzano tomatoes (or you could by Romas at the stores).  Just be sure that the tomatoes you use are in season in order to get the best flavor.



Cut the tomatoes in half and remove the seeds and heavy pieces of pulp.  Sprinkle generously with kosher salt, thyme, and give them a drizzle of olive oil.


Place the tomatoes in the 400 degree oven for 15 minutes.  Then turn off the oven, but don’t open the door.  Leave the tomatoes in the oven until it is completely cool.  The tomatoes should be slightly charred and a bit leathery.  They will not be completely dry. 



Place the tomatoes in a freezer bag and store in the freezer for months.  Thaw briefly before using on pizzas or in sandwiches.
